Application of Pomegranate Peel Extract, a Waste Agricultural Product, as a Natural Preservative in Tahini

The pomegranate peel, an agricultural by-product or waste, is a rich source of bioactive compounds. In the current study, addition different concentrations peel hydromethanolic extract (PPE) into tahini was investigated. in ratio 1 : prepared, and PPE yield evaluated. HPLC Folin-Ciocalteu methods were used to determine phenolic compounds total content PPE, respectively. antioxidant activity investigated by DPPH FRAPS assays. Then, concentration (0, 0.25, 0.5, 1, 2%) added tahini. Thereafter, peroxide value, TBARS, sensory analyses determined during 6 months storage. reported at 18.90%. Gallic acid, ellagic punicalagin identified as most abundant PPE. content, DPPH, FRAP assay evaluated 1577.65 mg/g GAE, 54 μg/ml, 483.24 mM, It shown that tahini, increase value TBARS controlled. 2% act better inhibit lipid peroxidation.
